Yum. This Butternut Squash Soup with Star Anise and Ginger Shrimp was flavorful but I don't think I'll make this again without making a modification here or there. I should have read over the comments more but I just wanted to go for it. This soup was a little too watery for me so next time I would leave out the water like others have suggested. The shrimp was expensive but delicious and complimented the dish well. I need to buy some of those goggles from Sur La Table because I was bawling while cutting the scallions. Two thirds of a cup is a lot of slicing and dicing and I'm not exaggerating, I was letting out buckets of tears. I tear up with onions but this was something else.
Might make it again but other soups have cut in line so it might be awhile.
We should have a new disposal installed tomorrow, thank God!
