Vegetarian Chili and Cornbread.

This isn't a soup but I think it counts anyway.  I've thought about ditching meat completely from time to time.  This recipe for Vegetarian Chili completely fooled me and I didn't miss the meat.  It is thick and substantial.  (I found the bulgur wheat at Whole Foods.)

I made it for my in-laws this past weekend and they had seconds.  The truest compliment to a cook.  After it was simmering on the counter I thought about wanting cornbread to go with it so I found this recipe for cornbread muffins.  The muffins were a little dense and I would like them lighter.  But overall they were very easy and delicious.

I would make both again soon, maybe when there is snow on the ground.
